If two thirds of the US adult population are obese/overweight, I am sure many of them are trying to watch their calorie intake. It seems to me there is a sizeable market need that is not being met. A chef with an eye for business could make a killing by serving large, low calorie, well-balanced, tasty meals.

I'm sure the two thirds of the US adult population who are obese or overweight would see significant decrease in their caloric intake if professional chefs started making calories a more important factor. I'm positive it has nothing to do with a fast food lifestyle, nor a TV dinner life style. I have chef's prepare all my meals.
