I encountered the same thing here about two weeks ago. They had put up a sign about the situation, The sign explained that the shortage had dramatically increased the cost of tomatoes, and it said that, by default, tomatoes would be removed from their recipes "to ensure the highest quality and safety" or something like that. They offered to include them by request, but they made it sound like you were taking a health risk to ask them for the expensive tomatoes they were buying.
